In Kácov brewery they anxiously stick to tradition and so their beer brewing is a clear example of classical Czech technoogy. It consists mainly in preparing wholemalt brews in wholecopper brewing set of two containers. They carefully pick the ingredients and so the beer Hubertus is made of malt from close malthouse, Czech hop and water from their own wells. The main fermentation, as it's common in good Czech breweries, takes place in fermentation rooms with open tubs by bottom fermentation. The beer is pumped into lager tanks where it keeps fermentating for a few weeks or even months.
